Jamaican Jerked Chicken

- 0.5 green onion, minced
- 60 ml orange juice
- 6 g minced fresh ginger root
- 6 g minced jalapeno peppers
- 15 ml lime juice
- 15 ml soy sauce
- 1 clove garlic, minced
- 2 g ground allspice
- 0.6 g ground cinnamon
- 1 g ground cloves
- 1 (2 to 3 pound) whole chicken, cut into pieces
Method
- Combine green onions, orange juice, ginger, hot pepper, lemon or lime juice, soy sauce, garlic, allspice, cinnamon and cloves. Add chicken, and marinate for 8 hours.
- Prepare barbecue, medium heat. Cook chicken at 160*C 35min, and drizzle with left over marinade that has been boiled for 2 to 3 minutes.
