Jamaican Jerked Chicken

Ingredients
  • 0.5 green onion, minced
  • 60 ml orange juice
  • 6 g minced fresh ginger root
  • 6 g minced jalapeno peppers
  • 15 ml lime juice
  • 15 ml soy sauce
  • 1 clove garlic, minced
  • 2 g ground allspice
  • 0.6 g ground cinnamon
  • 1 g ground cloves
  • 1 (2 to 3 pound) whole chicken, cut into pieces

Method
  1. Combine green onions, orange juice, ginger, hot pepper, lemon or lime juice, soy sauce, garlic, allspice, cinnamon and cloves. Add chicken, and marinate for 8 hours.
  2. Prepare barbecue, medium heat. Cook chicken at 160*C 35min, and drizzle with left over marinade that has been boiled for 2 to 3 minutes.
