Basic Marinade

Ingredients

3 tablespoons Red wine vinegar
1/3 cup Extra-virgin olive oil
2 cloves Garlic, chopped
1/4 to 1/2 teaspoon Crushed red pepper 
1 tablespoon Chopped fresh thyme
1 tablespoon Chopped parsley 


Method

Combine marinade ingredients in the bottom of a shallow dish. Season meat of choice with salt and pepper and set meat into marinade and turn to coat. Allow meat to hangout 10 minutes.




Brisket Marinade

  • 1 1/2 cups red wine
  • 1/2 cup olive oil
  • 1 1/2 tablespoons mustard
  • 1 1/2 tablespoons lemon juice
  • 1 tablespoon wine vinegar
  • 1 tablespoon horseradish
  • 1 1/2 teaspoons salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
Method

Mix all ingredients together. Pour over brisket and let marinate overnight in the refrigerator, turning occasionally. Remove brisket from marinade and boil remaining marinade for 5 minutes to use as a

Beef Rib Marinade

  • 1/4 cup lemon juice
  • 1/4 cup white vinegar
  • 1/4 cup olive oil
  • 3 tablespoons honey
  • 4 cloves garlic crushed
  • 1 teaspoon cayenne
  • 1 teaspoon ground black pepper

Method

Mix all ingredients. Place ribs in a container large enough to lay one rack flat. Pour marinade over ribs, coating completely. Let rest over night. Turn ribs over occasionally to allow marinade to soak in. Prepare smoker. Remove ribs from marinade and place in smoker. Boil remaining marinade for two minutes and use as a baste for ribs.

Pineapple Marinade

  • 1 cup crushed pineapple
  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 1/4 cup cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger powder
  • 1/4 teaspoon powdered cloves
Method

Mix all ingredients together and use immediately or store in airtight container for up to 7 days.


Greek Lamb Marinade

  • 3 tablespoons lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon bay leaf
  • salt and pepper to taste

Method

Combine all ingredients and mix well. Use this marinade on all cuts of lamb. Plan on marinating chops and small cuts for about 4 to 5 hours. Large cuts like leg of lamb should be marinated for 8 hours to overnight.

Guinness Marinade

  • 4 ounces Beer at room temperature
  • 2 garlic cloves
  • 1 ounce soy sauce
  • 1 tablespoon minced onion
  • 1 teaspoon shallots
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard
  • 1/4 teaspoon fresh tarragon
  • 1/4 teaspoon parsley
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon salt

Method

Finely chop garlic, shallot and onion and place in a small bowl. Finely chop parsley and tarragon and add to the bowl. Add the Worcestershire sauce, mustard, beer, soy sauce and seasonings then mix well to combine. Let stand for 30 minutes to blend flavors. Once you have finished marinating, place the remaining marinade in a small saucepan and reduce it for one or two minutes until slightly thickened. Mexican Marinade

  • 1/3 cup cider vinegar
  • 1/3 cup white vinegar
  • 1/3 cup olive oil
  • 1/3 cup fresh cilantro, chopped
  • 6 cloves garlic, minced
  • juice of 1 lime
  • 2 tablespoons cumin
  • 1 tablespoon black peppercorns
  • 1 tablespoon dried oregano
Method

Combine all ingredients and mix well. This marinade works best if it is made a day in advance so the flavors can blend. Marinate beef, lamb and pork for about 6 hours, poultry for 4 hours and fish for 1 hour.
